Tomato Basil Pizza recipe

Preheat oven to 450. Coarsely chop 2 tomatoes and mix with 1 teaspoon salt in a colander; wait 15 minutes. Bake 2 (12 inch) pre-baked pizza crusts for 5 minutes. In a bowl mix tomatoes with 8 ounces shredded mozzarella, 1 coarsely chopped red onion, 1/4 cup chopped fresh basil, 1/2 t black pepper, 2 T olive oil, 1/2 c sliced black olives, and 1/2 c sliced mushrooms. On crusts, spread 1/2 c pizza sauce, then mix. Sprinkle 8 more ounces mozzarella and 1/4 c grated parmesan. Bake about 8 minutes until cheese is completely melted.
